I know only one thing about Sunday’s meal: it’s fried chicken wings.
There is in some sense nothing more indulgently industrial about our food culture than the idea of a meal built around chicken wings, in the sense that if I were raising chickens for my own family as an occasional source of protein, a meal where we focusing on chicken wings would mean that the entire flock had been wiped out.
On the other hand, chicken wings seem to me to be a good example of how you can eat a relatively small amount of meat net and still have a good meal—if I make them, I am generally going to make a couple of interesting side dishes too.
The other thing I like about chicken wings is that they invite me to try new combinations of flavors. The basic gimmick is that you melt some butter and then toss in something that will emulsify fairly well into the butter and that’s what you toss the wings in when they’re ready.
So for anybody who opens this up today or early tomorrow, here’s the challenge: pick something for me to do with the wings in this poll:

I usually do hot wings, or barbecue. But harissa with lemon and honey sounds good. You've got me thinking now, next time I might do a lemon sauce like Chinese lemon chicken.
